Quinoa Stuffed Peppers

I’m always a sucker for recipes that allow me to cook with tons of colour. These quinoa stuffed peppers not only make a delicious summer side dish, they also really brighten up your plate! I served mine with chicken, but I think they would work just as well with a nice grilled salmon. Equal parts veggie and carb, you can easily get away with skipping the salad and just pairing these stuffed peppers with your protein for a complete and colourful meal!  Continue reading

Bahn-Mi in a Bowl

One of my favourite places to grab lunch in Toronto is Bahn-Mi Boys. For those of you unfamiliar with the term, Bahn-Mi is Vietnamese for bread and in Western culture is used to refer to a meat sandwich on traditional Bahn-Mi bread. Here in Toronto, Bahn-Mi Boys and its competitors around the city serve up Vietnamese sandwiches and tacos bursting with amazing flavour combinations (My favourite is the chicken taco with purple cabbage, kimchi, and cilantro – yum!). I came across this recipe for a Bahn-Mi inspired salad on Pinterest and knew I had to give it a try. A carb-free version of those delicious sandwiches could only be a good thing.  Continue reading

Mediterranean Seafood Pasta

There are some recipes I know will be great before I’ve even started prepping the ingredients. Certain flavours can jump out from the page and you just know that the combination will come together and form something delicious.
